Ingredients & Substitutions
1 large, store-bought flatbread
1 can of refried beans
Corn and Chilli Salsa, use desired amount
Pre-cooked carnitas, we used Traditional carnitas mexican style oven roasted from Trader Joe's
Shredded cheese, use desired amount
Crust: So many options to choose from when it comes to crust, but our absolute go-to is Trader Joe's (not sponsored, we just love it!) Keeping it simple we choose to go store-bought so any flatbread or even a naan would work in this situation, but if your heart is set on homemade we support that kind of dedication.
Refried beans: Again keeping it simple any refried canned bean would work in this situation.
Salsa: The salsa in this recipe will take place of the traditional pizza sauce, so for this recipe, we used Trader Joe's corn and chili salsa which is amazing! But any chunkier salsa would work for this recipe.
Meat: For this recipe, we use
d Trader Joe's Traditional Carnitas Mexican Style oven-roasted pork (pre-cooked). Not a fan of pork? No problem. You can also use shredded chicken from leftovers or pick up a rotisserie chicken. Not a fan of meat altogether? Just skip this step and you have a delicious meatless southwest pizza.
Cheese: We used shredded parmesan for this recipe, you can substitute with just about any shredded cheese. Great substitutes are pepper jack or blended mix shredded cheese.
Cooking Instructions
Preheat oven to 350°, place flatbread on cooking sheet.
Spread can of refried beans to flatbread as a base.
Heat up carnitas per package instructions, if using the one we listed in the recipe it says to heat in microwave or stovetop for 3-5 minutes.
Spread corn salsa over crust over the beans.
Shred the warmed-up pork and spread over pizza, for thicker pieces skip this step.
Top with shredded cheese of your choice, for this recipe we used shredded parmesan.
Bake in the oven until cheese melts and you get a golden/ brown crust.
For an extra flavor kick top with blue cheese or ranch!
